classic family favorites...
Wash squashes, cut in half lengthwise. Scoop out seeds and fibers. Put in baking pan, cut side down, and add 1/2” boiling water to the pan. Bake in a preheated 400°F oven for 20 minutes. Meanwhile, peel, core, and dice apples. Mix apples with the butter and the syrup. Turn squash halves cut side up, brush surfaces with melted butter and sprinkle with salt and pepper. Fill squashes with the apple mixture. Cover pan with foil and continue baking for 30 minutes or until apples and squash are tender. Serves four.
Aunt Mary gave us this recipe, but Ellen made it famous when she entered it into the local newspaper recipe contest in the “Vegetable” category when she was 13 years old. It won second place in the Vegetable category, and she was invited to French’s Mustard test kitchens to prepare it for a panel of judges.
