Pulverize graham crackers using a food processor, or rolling pin. Mix with the 1/4 cup melted butter. Press the mixture into the bottom of a 60” spring form pan.
Blenderize cottage cheese and cream cheese until well blended and creamy. Gradually, blend in sugar and eggs. Add cornstarch, lemon juice, and vanilla. Add butter and sour cream. Pour in pan. Bake at 325°F for 1 hour and 10 minutes. Let cake stand with oven door closed for 2 hours. Take out. Cool. When completely cool, remove sides of the pan.
Top with strawberry dessert topping if desired.
