Cream the cream cheese and sugar. Add beaten egg yolks. Fold in whipped cream, stiffly beaten egg whites, and vanilla. Pour in an ice cube tray and freeze at least 6 hours.
Crush the graham crackers and mix together with butter and sugar. Sprinkle over the top and serve.
Update:
This old recipe assumes you still have (if you ever did) old-style ice cube trays with a leveraged system that lifts the ice cubes out of the tray. (You take that piece out before filling the trays.) These aren't made any more. You could use a 9" pie plate instead. Try filling a ready-made graham cracker crust and crumbling the graham crackers over.
