Melt butter in a medium saucepan; blend in flour, Worcestershire sauce, and mustard. Gradually stir in beer. Cook over medium heat stirring constantly until smoothly thickened and mixture comes to the boil. Reduce heat, add cheese, and continue stirring until smoothly melted. Transfer to a fondue pot and place over a burner. Serve with bread cubes for dipping. Makes three cups.
We found this recipe on a family trip to Canada back in the early seventies. We stopped at a tourist gift shop in the Thousand Islands that sold Canadian products, including Canadian cheese. And there it was! A brochure with recipes using Canadian cheese, prominently featuring a picture of this cheese fondue on the cover. Ellen still has the original brochure from the Canadian Dairy Food Service Bureau in Toronto, Ontario.
