classic family favorites...
Combine in a mixing bowl the butter, cheese, flour, mustard, and salt. Blend these ingredients together until mixture looks like coarse meal. Lightly beat the egg yolks, adding Tabasco sauce and ice water. Pour over flour mixture. Toss ingredients together until a dough forms. Gather dough into a ball, then knead quickly and briefly with the heel of your hand, stretching and folding the dough until it is smooth and elastic. Divide dough into three sections. Wrap each portion in wax paper. Chill dough for at least an hour.
Roll out dough on a lightly floured surface into a rectangle about 12” long and 1/4” thick. Trim edges with a sharp knife. Sprinkle dough with either sesame seeds, curry powder, paprika, grated Parmesan or crushed crisp bacon (optional). Lightly roll toppings into dough. Cut dough into narrow strips four inches long. Twist strips into spirals and place on an ungreased baking sheet. Form one quarter of the strips in rings, or use leftover dough.
Bake at 400°F about 8 minutes in the middle of the oven until the straws are golden brown. Watch carefully as they burn easily. Makes 3 dozen.
