Lasagna Spinach Rollups

Lasagna Spinach Rollups

Cook noodles, cool in water, and lay out to dry.

Filling: Sauté onion in 2 Tbs. butter until tender. Combine spinach, onion, mozzarella cheese, sour cream, and egg in a bowl and set aside.

Sauce: Melt 1/4 cup butter. Stir in flour, bouillion, and pepper. Stir in milk and cream.

Spread small amount of sauce in a 9”x13”x2” pan. Spread 1/4 cup filling on each noodle and roll it up. Place rolls in pan and top with sauce. Sprinkle with Parmesan. Bake at 350°F for 30 to 35 minutes. Serves eight to ten.
