Lima Bean Casserole


Lima Bean Casserole

Soak beans overnight. After soaking, add some salt to water and cook until tender. Do not overcook. Drain and rinse in hot water. Put in casserole baking dish. Dab with butter. Mix sugar, mustard, and salt and sprinkle over beans. Stir in molasses and sour cream. Bake 50 minutes at 350°F. If you make ahead, do not add molasses and sour cream until just before serving. Serves eight to ten.

Mom's Shortcut Version uses canned (or frozen) lima beans.
