Minestrone
(Wegman's recipe)
- 1 Tbs. Wegmans Pure Olive Oil
- 1 pkg. (16 oz) Food You Feel Good About Cleaned & Cut Minestrone Soup Vegetables (Produce Dept) - includes potatoes, zucchini, leeks, carrots, celery, onions, and cabbage.
- 1 can (48 oz) Food You Feel Good About Chicken Culinary Stock
- 1 can (15.5 oz) Wegmans Dark Red Kidney Beans or Italian Classics Cannellini beans, undrained
- 1 can (14.5 oz) Wegmans Diced Tomatoes, undrained
- salt and pepper
Heat oil in large stockpot on high. Add soup vegetables; cook 2 minutes. Add stock, beans, and tomatoes; bring to boil. Reduce heat to low; simmer, covered, 25-30 minutes, until carrots and potatoes are tender. Season to taste with salt and pepper.
Option(s):
- Add your own special blend of herbs and spices.
- Add pasta or rice.
- Serve with freshly grated Parmesan, Romano or Asiago cheese.
- Top with croutons (as shown above).
Serves six.
