Strawberry Rhubarb Pie

(from the cookbook that Sibley's gave to brides-to-be who registered there in the 1950's)


Strawberry Rhubarb Pie Slice

Line a 9" pie pan with pastry; trim to fit pan. Mix sugar and flour; combine with rhubarb and strawberries. Fill pastry-lined pan; dot with margarine. Cover with top crust; cut several slits in the top crust. Trim 1" larger than pan; fold top crust under bottom crust. Press or crimp edges together. Bake at 425°F for 40 to 50 minutes.

Mom makes at least two of these for our Thousand Islands vacation each summer.
