Steam sausage in a small amount of water, skin pricked all over, until water is evaporated. Sauté sausage in the pan, browning all over. Remove sausage and drain. Leave some fat in the pan, or if none, add olive oil. Sauté onion and garlic a few minutes until soft. Add the remaining ingredients except zucchini, tortellini, and parsley. Bring to a boil, reduce heat and simmer 30 to 40 minutes. Add the zucchini, tortellini, and parsley and cook 10 minutes more.
